Sweet Corn Chowder...








 
 
Sweet Corn Chowder
 
5 ears of sweet corn
5 small carrots (sm.dice)
2 medium potatoes (sm.dice)
1 medium onion (sm.dice)
1 medium sweet red pepper (small dice)
1 clove garlic (minced)
1/4-1/2 cup flour
1 tsp red pepper flakes
1 ham bone
1-2 cups lean ham from bone (small dice)
2 cups heavy cream
1 quart chicken stock
2 T butter
Salt & Pepper to taste
Hot sauce to taste
 
Begin by cutting all of the corn off of the cobs and set corn aside,
(keeping the cobs for the stock)
In a large stock pot add chicken stock, ham bone, corn cobs.
Bring to a boil and let simmer for an hour.
Remove cobs and scrape into stock.
Remove ham bone, let cool and remove any lean meat.
Dice lean ham (small dice)
Dice carrots, onions, sweet red pepper, potatoes, & garlic.
Saute carrots, onions, garlic, sweet red pepper & corn in butter.
Add a bit of flour to vegetables to make a roux.
Saute vegetables and flour for a few minutes.
Add sauteed vegetables to stock, let simmer 30 minutes.
Add potatoes, let simmer 30 minutes.
Add diced ham.
Add cream and bring back to a simmer.
Add salt & pepper, hot sauce, red pepper flakes to taste.
